Abstract
Una composicion antimicrobiana que incluye una cantidad de nisina y de e-poli-L-lisina efectiva para la prevencion del aumento de los recuentos microbianos en un producto alimenticio. La nisina y la e-poli-L-lisina actuan en forma sinérgica para prevenir aumentos en los recuentos microbianos en los alimentos sin afectar ni el sabor ni las propiedades físicas de los mismos. Esta composicion antimicrobiana sinérgística se puede utilizar para inhibir los patogenos comunes que se encuentran en los alimentos, tales como listeria monocytogenes Clostridium botulinim, Bacillus cereus, Staphylococcus aureus, así como también organismos de deterioro tales como Lactococcus spp, Streptococcus spp. etc.
