Abstract
"COMPOSIçãO ANTIMICROBIANA, GêNERO ALIMENTìCIO, E, MéTODO PARA PREVENIR UM AUMENTO NAS CONTAGENS MICROBIANAS EM UM GêNERO ALIMENTìCIO". é fornecida uma composição antimicrobiana que inclui uma quantidade de nisina e de <sym>-poli-L-lisina eficaz para prevenir um aumento nas contagens microbianas em um gênero alimentício. A nisina e a <sym>-poli-L-lisina atuam sinergisticamente para impedir os aumentos nas contagens microbianas em alimentos, sem afetar o seu sabor e as suas propriedades físicas. Esta composição antimicrobiana sinergística pode ser usada para inibir patógenos comuns transportados pelos alimentos tais como Listeria monocytogenes, Clostridium botulinuin, Bacillus cereus e Stapliylococcus aureus, bem como os organismos de deterioração, tais como o Lactococcus spp., o Lactobacillus spp., o Leuconostoc spp., o Streptococcus spp., etc.
