Abstract
La invención se relaciona con una composición bioconservadora de alimentos que comprende un consorcio de bacterias ácido lácticas, que comprende por lo menos una bacteria ácido láctica homofermentativa, por lo menos una bacteria ácido láctica heterofermentativa y un agente activador. La composición bioconservadora inhibe el crecimiento de patógenos tales como Salmonella, E. coli, Staphylococcus aureus, Listeria monocytogenes, Aspergillus niger y Aspergillus flavus, y puede prolongar la vida útil del alimento procesado y sin procesar.
