Abstract
El presente provee un proceso para la preparacion de un produccion alimenticio congelado que comprende la etapa de poner en contacto un intermediario alimenticio con un sistema emulsionante, en el que el sistema emulsionante consiste esencialmente de compuestos de la formula (1), en la que R1 es un grupo hidrocarbonado y opcionalmente mono-diglicéridos y/o mono-diglicéridos lactilados no saturados.
