Abstract

Métodos y composiciones que se relacionan con enzimas fúngicas desaturasas de hongos, que modulan la cantidad y ubicación de los enlaces dobles en ácidos grasos poliinsaturados de cadena larga (LC-PUFA). En particular, la presente se relaciona con métodos y composiciones para mejorar los perfiles de ácidos grasos omega-3 en productos y partes de plantas usando enzimas desaturasas y los ácidos nucleicos y los ácidos nucleicos que codifican dichas enzimas. En realizaciones particulares, las enzimas desaturasas son D15-desaturasas fúngicas. Reivindicación 1: Un polinucleótido aislado de hongos, Caracterizado porque comprende una secuencia de ácido nucleico que codifica un polipéptido que posee actividad desaturasa, que desatura una molécula de ácido graso en el carbono 15.
