Abstract

Se revela un puré de papas y el método de elaboración del mismo. El puré de papas puede utilizarse para producir productos alimenticios tales como papas en puré, pastelitos de papas, panqueques de papa y bocadillos de papa. El puré de papas también puede utilizarse para formar productos de papa deshidratados tales como hojuelas, gránulos, aglomerados, láminas, piezas, trozos, harina y partículas. Los productos de papa deshidratados son adecuados para utilizarse en una amplia variedad de productos alimenticios, tales como papas en puré, pastelitos de papa, panqueques de papa, bocadillos de papa, panes, aderezos y salsas. Los productos alimenticios elaborados a partir del puré y/o a partir de los productos deshidratados producidos a partir del mismo tienen mejor sabor a papa y mejor textura.
