Abstract
Se refiere a un procedimiento para la preparación de frutas y legumbres que contienen carotenoides, de modo de obtener una mejor estabilidad delcolor, en el cual se ponen en contacto en fase acuosa dicha fruta o dicha legumbre con un producto protector elegido de entre el grupo constituido porel té, los sub-productos de la extración del té, una especia, salvado de arroz, pericarpio y semillas de tomates, semillas de paprika, y sus mezclas.
