Abstract

Se describe un procedimiento para la preparación de una base aromática, en el cual se prepara una mezcla que comprende por lo menos agua y una materiaprima amilasa, se licua con por lo menos un carbohidrasa y se le trata enzimáticamente conuna lipasa o una lipoxigenasa, y la utilización de basearomática seca o líquida para la fabricación de un producto alimenticio.
