Abstract

Oppfinnelsen er rettet mot et fettpreparat med en mesofasematriks med karakteristika som for et matfett. Fettpreparatet kan fremstilles ut fra en blanding av en oljefase og en emulgeringsmiddelblanding. Oljefasen er fortrinnsvis minst én olje, og emulgeringsmiddelblandingen omfatter et første emulgeringsmiddel med en lav HLB-verdi på mellom 2 og 6, og et andre emulgeringsmiddel med en høy HLB-verdi på mellom 9 og 22, hvor forholdet mellom lav-HLB-emulgeringsmidlet og høy-HLB-emulgeringsmidlet er fra 1:3 til 3:1. Ved en annen utførelsesform er oppfinnelsen rettet mot et matvareprodukt omfattende fettpreparatet. I denne form kan fettpreparatet erstatte et tradisjonelt matfett som anvendes i matvareproduktet. Fettpreparatet med mesofase-matriksen inneholder generelt lave nivåer av trans-umettede fettsyrer og lave nivåer av mettede fettsyrer.
