Abstract
La presente invención se relaciona con productos de bebidas de etiqueta limpia. En particular, la invención se relaciona con la combinación de un sistema de proteínas inducido por la agregación controlada de proteínas de la leche y solo un hidrocoloide con alto contenido de goma gelana de acilo alto que imparte atributos sensoriales sobresalientes en el producto de bebida, en particular cuando contiene grasa/azúcar reducidas. Un método para producir tal bebida y los productos obtenibles a partir del método son, además, parte de la presente invención.
