Abstract
La presente invención se relaciona con productos de bebida. Particularmente, la invención se refiere a un sistema de proteína inducido por agregación controlada de proteínas de leche que imparte atributos sensoriales sobresalientes en el producto de bebida, particularmente, cuando no contiene grasa y/o contiene menos azúcar.
