Abstract

En este documento se proveen métodos para producir un aislado de proteína de frijol mungo que tiene una alta funcionalidad para una amplia gama de aplicaciones alimentarias. En algunas modalidades, los métodos para producir el aislado comprenden uno o más pasos seleccionados de: (a) extraer una o más proteínas de frijol mungo de una fuente de proteína de frijol mungo en una solución acuosa, por ejemplo, a un pH entre aproximadamente 6.5-10.0; (b) purificar proteína del extracto usando al menos uno de dos métodos: (i) precipitar proteína del extracto a un pH cercano al punto isoeléctrico de una fracción rica en globulina, por ejemplo, un pH entre aproximadamente 5.0-6.0; y/o (ii) fraccionar y concentrar la proteína del extracto usando filtración tal como microfiltración, ultrafiltración o cromatografía de intercambio iónico; y (c) recuperar el aislado de proteína purificado.
