Abstract
Esta descripción describe métodos para obtener una composición de proteína vegetal gelificada usando transglutaminasa para formar geles que tienen alta elasticidad y resistencia de gel. En un aspecto los métodos usan una proteína vegetal altamente soluble o incluyen etapas, tales como cizallamiento, de manera que al menos 40 % de la proteína con respecto a la materia prima se disuelve en solución antes de añadir transglutaminasa. Las composiciones gelificadas descritas son útiles en carnes alternativas.
