Abstract
Se proporcionan formadores de crema para aclarar productos alimenticios. Los formadores de crema tienen estabilidad a largo plazo, una capacidad de aclaramiento alta y producen una sensación agradable en la boca. En una modalidad general, la presente invención proporciona una composición formadora de crema secada por aspersión que comprende azúcar añadida que comprende sacarosa y/o lactosa en un intervalo de 5-30% en peso; leche en un intervalo de 30-60% en peso; grasa en un intervalo de 15-40% en peso; caracterizada además porque esa composición no contiene emulsionantes y/o sales reguladoras y estabilizantes añadidos. La invención proporciona, además, una mezcla formadora de crema para café que comprende la composición formadora de crema anterior y café vestido o compactado, caracterizada además porque el café se disuelve después de la disolución del formador de crema.
