Abstract

[Solución] La presente invención es un proceso para fabricar fideos instantáneos, que compre tratamiento con calor en condiciones específicas de temperatura y humedad, particularmente un proceso para fabricar fideos instantáneos que comprende la etapa para realizar un proceso de calentamiento a una temperatura dentro de la cámara de 130 a 20°C, en donde el proceso de calentamiento se lleva a cabo a una atmósfera de -5% a +10% de la humedad absoluta del vapor a presión atmosférica a esta temperatura.
