Abstract
Se pretende proporcionar un método para la producción de fideos instantáneos que tienen textura suave porque tienen una superficie suave y un núcleo moderadamente elástico y tales fideos instantáneos. Las tiras de fideos crudos preparados a partir de una masa de fideos amasada con una grasa o aceite en polvo y/o emulsionante en polvo se tratan con vapor sobrecalentado, seguido por el secado de las tiras de fideos, o ajuste del pH, esterilización por calor, y el sellado completo. De esta manera, la presente invención proporciona un método para producir fideos instantáneos que tienen textura suave porque tienen una superficie suave y un núcleo moderadamente elástico.
