Abstract

El método de producción de un producto alimenticio envasado, que comprende: cocinar un producto alimenticio a una temperatura de cocción de al menos 100 °C, introduciendo el producto alimenticio cocido en una atmósfera de vapor sobrecalentado, la atmósfera de vapor sobrecalentado que contiene menos de 3% de oxígeno y que tiene una temperatura de al menos 120 °C, secar el producto alimenticio a un valor de agua aw en el intervalo de 0.70 a 0.92, en la atmósfera de vapor sobrecalentado, el envasado del producto alimenticio en un recipiente de envasado y herméticamente sellado de la recipiente de envasado, y productos alimenticios envasados en un envase impermeable al O2 , obtenible por un método de cualquiera de las reivindicaciones precedentes, donde el producto alimenticio tiene un valor de agua a en el intervalo de 0.70 a 0.92.
