Abstract

Un procedimiento de fabricación de un producto alimentario cocinable o recalentable en microondas o térmicamente, comprendiendo el producto un sustrato que comprende piezas de aves de corral, pescado, carne roja, alimentos lácteos o procesados; comprendiendo el procedimiento las etapas de: aplicar un revestimiento de una composición acuosa de revestimiento al sustrato; en la que la composición acuosa de revestimiento comprende agua y del 0,1 al 5% de una mezcla que comprende en peso en seco: goma de celulosa15-35% almidón modificado 15-50% hidrocoloide 20-30% componente proteico 10-20% en la que los porcentajes de los ingredientes están en peso en seco y se seleccionan entre los intervalos citados hasta un total deI 100%; e ingredientes adicionales opcionales; aplicar un primer revestimiento de pan rallado fino al revestimiento acuoso para formar una capa del pan rallado fino que engloba al sustrato; aplicar una composición de rebozado al primer revestimiento para formar un revestimiento de rebozado; y, opcionalmente, aplicar una capa exterior de pan rallado al revestimiento de rebozado.
