Abstract
La presente invención se refiere a un proceso para producir un producto de confitería congelado que comprende una composición congelada que contiene inclusiones en la forma de partículas congeladas, el proceso comprende: preparar una mezcla de ingredientes que tienen un contenido de sólidos totales desde 5 hasta 25 % y que contiene desde 0.2 hasta 2.0 % en peso de uno o más estabilizadores; opcionalmente pasteurizar y/u homogeneizar y/o dejar en reposo la mezcla; congelar la mezcla para formar partículas congeladas en una máquina fabricante de hielo fragmentado que comprende un barril refrigerado y una taladradora; y la dosificación de las partículas congeladas en la composición congelada.
