Abstract

Se describe un procedimiento para preparar una confitura de hielo que tiene un contenido de sólidos total de 8 a 25% en peso y un excedente de 10 a 100%, el procedimiento comprende las etapas de: airear y congelar parcialmente una mezcla de ingredientes; producir una suspensión que comprende la mezcla aireada y parcialmente congelada, y partículas congeladas las cuales tienen un tamaño de 0.1 a 1 mm; en donde la cantidad de partículas congeladas es de 10 a 70% en peso de la suspensión; y congelar adicionalmente la suspensión en un extrusor de temperatura baja. También se proporciona una confitura de hielo.
