Abstract

La presente invención se refiere a un proceso para la manufactura de un producto lácteo acidificado bebible basado en suero ácido sin la formación de coágulos después de la acidificación, el producto lácteo, bebible tiene una relación de caseína:proteína del suero de 0.5:99.5 a 12:88 (p/p), en donde el proceso involucra el mezclado directo de todos los ingredientes antes de ser acidificados. Además, la invención proporciona un producto lácteo acidificado bebible que se puede obtener por medio del presente proceso con un bajo contenido de caseína. Mientras que tiene el mismo sabor y las mismas características organolépticas que el yogur bebible tradicional, tiene una diferente estructura de proteínas y una diferente composición con respecto al contenido de caseína y proteínas del suero.
