Abstract
Esta invención se relaciona con un método para producir polvos y líquidos que contienen proteínas de leche, que son estables en un medio ácido. En particular, la invención tiene que ver con un método para producir un polvo que puede mezclarse con agua, leche o jugo para formar una bebida proteica acidulada altamente estable. Además, la invención se extiende a un método para producir una bebida de leche saborizada y carbonatada o una bebida de leche saborizada acidulada y carbonatada que es estable en un medio ácido. La invención también describe métodos para producir bebidas estilo yogurt y queso crema al mezclar un componente ácido estabilizado y un componente proteico estabilizado para formar un componente proteico acidulado.
