Abstract
La presente invención se refiere al descubrimiento de que receptores de sabor humanos específicos en la familia de receptores de sabor TR2 responden a compuestos amargos particulares presentes en, por ejemplo, café. También, la invención se refiere al descubrimiento de compuestos y composiciones específicos que contienen esa función como bloqueadores de sabor amargo y al uso de los mismos como bloqueadores de sabor amargo o moduladores de sabor en, por ejemplo, café y alimentos, bebidas y medicamentos con sabor a café. Asimismo, la presente invención se refiere al descubrimiento de un compuesto que antagoniza numerosos T2R5 humanos diferentes y al uso de los mismos en ensayos y como un bloqueador de sabor amargo en composiciones para su ingestión por humanos y animales.
