Abstract
Composición de confitura helada libre de edulcorante intenso, que tiene un contenido reducido en azúcar que no excede 15% en peso sobre la base de la composición total, la cual comprende a. una mezcla de sacarosa sobre la base de la composición total, en donde la cantidad de fructosa es hasta 80% del total de azúcares, b. un nivel igual o menor a 8% en peso de sólidos de lecha desnatada, c. menos del 7% en peso de oligosacáridos y/o polisacáridos con índice glicémico medio a alto, d. al menos un estabilizador de galactomanano, y e. menos del 2% de polioles. De acuerdo a la segunda invención, la cantidad de sólidos de lecha desnatada es más del 8% en peso.
