Abstract
Provista es una composición comestible que comprende, con base en el peso total de la composición, a) 0 a 50% por peso de un ingrediente lácteo teniendo un bajo contenido mineral en términos de contenido de cenizas de 5.5% por peso o menos, b) 0 a 25% por peso de un componente de cacao teniendo un bajo contenido mineral en términos de un contenido de cenizas de 4.5% por peso o menos, c) 0 a 2% por peso de un emulsificante seleccionado a partir de la lista que consiste en ésteres de ácido acético de mono y diglicéridos de ácidos grasos, ésteres de ácido láctico de mono y diglicéridos de ácidos grasos, ésteres de ácido cítrico de mono y diglicéridos de ácidos grasos, y poli-ricinoleato de poliglicerol, d) un componente graso, e) 0 a 60% por peso de por lo menos un azúcar y/o poliol del cual la solución saturada tiene una actividad de agua de por lo menos 0.84; donde (i) el contenido de grasa total de la composición es de 25 a 60% por peso (ii) el contenido del componente b) es de por lo menos 2% por peso o el contenido del componente c) es de por lo menos 0.3% por peso, si el contenido del componente a) es menor que 5%. Además, un producto alimenticio comprendiendo la composición anteriormente mencionada es provisto. En tal un producto alimenticio, la composición puede estar presente en la forma de una estructura tal como una capa que separa por lo menos dos otros componentes mediante estar arreglados entre y en contacto con dichos por lo menos dos componentes.
