Abstract
COMPOSIÇçO COMESTÍVEL PARA USO COMO UMA BARREIRA PARA UMIDADE OU ESTRUTURA RESISTENTE A UMIDADE, E, PRODUTO ALIMENTÍCIO É apresentada uma composição comestível composta, com base no peso total da composição, de a)O a 50% em peso de um ingrediente de laticínio tendo um baixo teor de minerais em termos de um teor de cinzas de 5,5% em peso ou menos, b)O a 25% em peso de um componente de cacau tendo um baixo teor de minerais em termos de um teor de cinzas de 4,5% em peso ou menos, c)O a 2% em peso de um emulsificante escolhido da lista que consiste de ésteres de ácido acético de mono e diglicerídeos de ácidos graxos, ésteres de ácido lático de mono e diglicerideos de ácidos graxos, ésteres de ácido cítrico de mono e diglicerideos de ácidos graxos, e poliglicerol poliricinoleato. d) um componente graxo, e) O a 60% em peso, pelo menos de um açúcar e/ou poliol, do qual a solução saturada tem uma atividade de água pelo menos de 0,84; onde (i) o teor total de gordura da composição é de 25 a 60% em peso e (ii) o teor do componente b) é pelo menos 2% em peso ou o teor do componente c) é pelo menos 0,3% em peso, se o teor do componente a) é menor do que 5%.
