Abstract
Se describen en la presente ingredientes de alimentos reducidos en ácidos orgánicos y métodos de hacer ingredientes de alimentos reducidos en ácidos orgánicos teniendo un sabor menos amargo y mejores propiedades organolépticas a un pH bajo que ingredientes de alimentos convencionales con un mayor contenido total de ácidos orgánicos. El amargor reducido de los ingredientes de alimentos de la presente invención puede ser logrado sometiendo los ingredientes de alimentos a métodos de reducción de ácidos orgánicos/sales orgánicas.
