Abstract
La invención proporciona composiciones y métodos para reformular alimentos para reducir el contenido de sodio, mejorando al mismo tiempo significativamente la percepción de sal y minimizando el sabor amargo adicional. En ciertas modalidades, la invención proporciona composiciones para mejorar el sabor salado que incluyen una mezcla de tres sales de potasio, a decir cloruro de potasio, fosfato monopotásico, y citrato de potasio, las cuales, cuando se usan junto con cloruro de sodio, mejoran significativamente la percepción de sal en alimentos y bebidas, sin impartir al mismo tiempo ningún sabor remanente amargo o impartiendo un sabor remanente amargo limitado. En otras modalidades, la invención proporciona composiciones que mejoran el sabor salado que incluyen cloruro de potasio en combinación con un ácido orgánico y, opcionalmente, una sal de potasio de ácido orgánico.
