Abstract
La présente invention concerne un procédé de traitement de granulé de poissons d'eau douce extrudé caractérisé en ce que le granulé sec extrudé présentant une teneur en humidité de 7 % à 14 % est thermiquement chauffé dans la chambre de fumage et d'ébouillantage par le même chauffage à une température de 110 °C, après quoi le granulé se déplace vers un mélangeur sous vide dans lequel, sous pression, une substance aromatique liquide de 30 % d'eau à 70 % et une température de 30 °C est ajoutée en la quantité de 0,51/kg de granulé et respectivement de 70 % de glycol à 30 %, après la même distribution de la solution ci-dessus en la quantité de 0,51 par kilogramme de granulé extrudé, de l'huile de colza est ajoutée sous pression à 50 g par kilogramme de matière première sèche et en outre est agitée durant environ 2 heures pour atteindre la température ambiante, puis les ingrédients sont ajoutés sous la forme de mélanges de lécithine, de gomme de guar et de xanthane à 2 % par kilogramme de granulés, ainsi que du gluten de blé en une quantité de pas plus de 5 % par kilogramme de granulés et de la farine de soja dégraissée en une quantité totale de 10 g/1 kg de matière première sèche l'ensemble étant soumis au procédé de mélange jusqu'à obtenir un revêtement souple de la matière première qui refroidit jusqu'à la température ambiante.
