Abstract

L'invention concerne une composition nutritionnelle liquide qui contient une protéine, un lipide et un saccharide, et a une valeur calorique sous forme de composition de 1 kcal/ml ou plus, caractérisée par le fait que la concentration en protéine de la composition est de 30 à 100 mg/ml et que la concentration en sodium de la composition est supérieure à 2 mg/ml. Cette composition nutritionnelle liquide ne subit jamais de gélification ou de coagulation et peut conserver une stabilité à la chaleur élevée et des propriétés physiques favorables, même dans l'état où la protéine et le sodium coexistent à des concentrations élevées. Ainsi, il est possible de fournir un aliment nutritionnel liquide riche en protéine qui a une stabilité à la chaleur élevée et des propriétés physiques favorables et qui contient du sodium à une concentration élevée.
