Abstract

La presente invencion se refiere a composiciones asepticas de leche saborizada y procesos para elaborar composiciones asepticas de leche saborizada que utilizan temperaturas desde aproximadamente 35 a 65 degree F (2 a 18 degree C). el proceso usa una mezcla unica de un agente estabilizante, que comprende celulosa microcristalina coloidal, un agente espesante y un aditivo en combinacion con agentes saborizantes tipicos y uno o mas de otros ingredientes opcionales, tales como endulzantes, vitaminas y minerales, para formar una composicion aseptica de leche saborizada estable, particularmente leche de chocolate, adecuada para consumo como un alimento.
