Abstract
Изобретение относится к растворимым мицеллам сывороточного белка, имеющим размер менее 1 мкм и являющимся агломератами денатурированного сывороточного белка, при этом сывороточные белки локализуются таким образом, что их гидрофильные части ориентированы в сторону внешней части агломерата, а гидрофобные части ориентированы в сторону внутренней "сердцевины" указанных мицелл. Изобретение относится также к пригодным к употреблению продуктам, содержащим мицеллы белка молочной сыворотки, в частности, в форме концентратов или порошков мицелл сывороточного белка, и способу их производства.
