Abstract
A method for obtaining a food fatty product provides for converting high-fatty cream into butter and homogenizing thereof. While carrying out the process of homogenizing the product, the suspension of powdered linseed is applied in an amount of 0.4-6.0 % of content thereof in the ready product, which is prepared by mixing dry linseed powder with buttermilk in a ratio of 1:30-1:12 at a temperature of 20-40 °С with the following keeping of the suspension at this temperature for 10-30 minutes and cooling the prepared suspension up to the homogenization temperature of the food fatty product.
