Claims (30)
1. Способ усиления автолиза дрожжей, включающий
добавление сапонина в культуру дрожжей во время ферментации;
ферментацию дрожжей в присутствии сапонина и
проведение автолиза дрожжей в присутствии сапонина.
2. Способ усиления автолиза дрожжей по п. 1, дополнительно включающий
получение сапонина как продукта переработки сельскохозяйственной продукции.
3. Способ по п. 2, где стадия получения сапонина дополнительно включает
получение сапонина как продукта переработки сахарной свеклы.
4. Способ по п. 3, где стадия получения сапонина дополнительно включает
добавление сапонина в дрожжи в потоке исходного материала-мелассы.
5. Способ по п. 4, дополнительно включающий
добавление дополнительного сапонина в поток исходного материала-мелассы.
6. Способ по п. 5, где дополнительный сапонин содержится в экстракте сапонина.
7. Способ по п. 5, где сапонин содержится в измельченных и высушенных листьях сахарной свеклы.
8. Способ по п. 1, где сапонин представляет сапонин, полученный из растения.
9. Способ по п. 1, где дрожжевую культуру выбирают из группы, по существу состоящей из: saccharomyces cerevisiae (пекарские и пивные дрожжи), kluyveromyces fragilis, и штаммов candida, таких как candida utilis, и их комбинаций, saccharomyces delbruekii, saccharomyces rosei, saccharomyces microellipsodes, saccharomyces carlsbergensis, schizosaccharomyces pombe, kluyveromyces lactis, kluyveromyces polysporus, candida albicans, candida cloacae, candida tropicalis, candida guilliermondii, hansenula wingei, hansenula arni, hansenula henricii, hansenula americana и их комбинаций.
10. Способ по п. 1, где стадия ферментации включает периодическую ферментацию, периодическую ферментацию с добавлением подпитки или непрерывную ферментацию.
11. Способ по п. 1, дополнительно включающий стадию
повышения температуры во время автолиза дрожжей.
12. Способ по п. 1, дополнительно включающий
мониторинг автолитической активности измерением концентрации РНК во время автолиза дрожжей.
13. Способ по п. 1, дополнительно включающий
мониторинг концентрации свободного аминного азота (FAN) во время автолиза дрожжей.
14. Способ по п. 1, где при автолизе дрожжей продуцируются повышенные уровни продуктов из стенок дрожжевых клеток и дрожжевых экстрактов.
15. Способ по п. 14, где время получения повышенных уровней продукта из стенок дрожжевых клеток и дрожжевых экстрактов уменьшается за счет добавления повышенных уровней сапонина.
16. Способ по п. 1, где автолиз дрожжей в результате приводит к превращению сапонина в продукты ферментации сапонина.
17. Способ по п. 1, где дрожжевая культура содержится в суспензии дрожжей.
18. Способ по п. 1, где стадию ферментации проводят в реакторе для автолиза.
19. Продукт на основе липких дрожжей, содержащий поврежденные или ослабленные иным образом мембраны клеточных стенок дрожжей, полученный способом по п. 1.
20. Продукт ферментации сапонина, полученный способом по п. 1.
