1. Способ производства цукатов из кабачков различной степени спелости, включающий подготовку сырья, его варку в сахарном сиропе, отделение сырья от жидкой фазы и подсушивание, отличающийся тем, что невостребованный товарный урожай и оставшееся после ручного и машинного выделения семян сырье семеноводства кабачка моют, очищают от кожицы (кроме плодов технической степени спелости), нарезают кружочками толщиной 1,5-2,0 см или ломтиками толщиной 2,5×1,0 см или кубиками с гранями размером 2,5 см, заливают горячим 90-95°С сахарным сиропом с содержанием сухих веществ не менее 73%, выдерживают 6-8 ч, варят 30-40 мин с добавлением в конце варки 3 г лимонной кислоты и 50 г сока черноплодной рябины или малины.2.
