Abstract
1. Композиция для производства кисло-молочного продукта, закваски, биологически активной добавки, функционального продукта питания, содержащая обезжиренное молоко, бифидо- и/или лактобактерии, пребиотик, отличающаяся тем, что в качестве пребиотика она содержит гуммиарабик и/или фруктоолигосахариды и гуммиарабик, дополнительно содержит L-аргинин, витамины С и Ви лимонно-кислый натрий или калий, при следующем соотношении ингредиентов, мас.%:2. Композиция по п.1, отличающаяся тем, что она содержит бифидо- и/или лактобактерии в виде моноштамма или консорциума штаммов бифидобактерий и/или лактобактерий.3. Композиция по п.1, отличающаяся тем, что она дополнительно содержит стандартные закваски молочнокислых бактерий, применяемые для производства кисло-молочных продуктов в молочной промышленности.4. Способ производства кисломолочного продукта, закваски, биологической активной добавки, функционального продукта питания, характеризующийся тем, что осуществляют стерилизацию или пастеризацию обезжиренного молока в присутствии гуммиарабика, L-аргинина, лимонно-кислого натрия или калия, взятых в количестве 0,05-2,0, 0,01-0,1 0,01-0,07, соответственно, охлаждение до температуры заквашивания, внесение бифидо- и/или лактобактерий, витаминов С и В, сквашивание.5. Способ по п.4, что жидкую форму целевого продукта высушивают.6. Способ производства кисло-молочного продукта, закваски, биологической активной добавки, функционального продукта питания, характеризующийся тем, что осуществляют стерилизацию или пастеризацию обезжиренного молока, охлаждение до температуры заквашивания, внесение смеси гуммиарабика и/или фруктоолигосахаридов, L-а1.
