Claims (7)
- 대두침출액에 니트로 셀루로오즈를 첨가하고, 정제 경화 식물성유지 크림에 알긴산 유도체, 슈가에스테르을 첨가하여, 필요에 따라서 중합인산염, 항산화제 및 과실주를 첨가한 후에 그 혼합물을 저온에서 교반하여 균질유화하고, 저온 에이징에 의해서 식물성 휘핑크림을 생성하는 것을 특징으로 하는 대두가공식품의 제조방법.
- 제 1 항에 있어서, 식물성 휘핑크림은, 68.49중량%의 대두 침출액에 0.3중량%의 니트로 셀루로오즈를 첨가하고, 30중량%의 정제 식물성 경화유지 크림에 0.2중량%의 프로필렌글리콜 알기네이트, 0.1 중량%의 슈가에스테르 및 0.3중량%의 자당을 첨가하며, 필요에 따라서 0.01중량%의 중합인산염, 0.3중량%의 항산화제 및 0.3중량%의 과실주를 첨가한 후에 그 혼합물을 8℃이하의 온도로서 교반하고, 압력 5-10K/㎠의 저온 균질화 처리를 행하며, 10℃ 이하의 온도로서 에이징에 의하여 생성하는 것을 특징으로 하는 대두가공식품의 제조방법.
- 제 2 항에 있어서, 빙과류는, 93.49-68.49중량%의 대두 침출액에 0.3중량%의 니트로 셀루로오즈를 첨가하고, 5-30중량%의 경화 식물성유지크림에 0.2중량%의 프로필렌글리콜 알기네이트, 0.1중량%의 슈가에스테르 및 0.3중량%의 자당을 첨가하며, 필요에 따라서 0.01중량%의 중합인산염, 0.3중량%의 항산화제 및 0.3중량%의 과실주를 첨가한 후에 그 혼합물을 8℃이하의 온도로서교반하고, 압력 5-10K/㎠의 저온 균질화처리를 행하며, 10℃이하의 온도로서 에이징을 한후 -20℃의 온도로서 경화시켜 생성하는 것을 특징으로 하는 대두 가공식품의 제조방법.
- 제 2 항에 있어서, 식물성 음료는, 93.49-68.49중량%의 대두 침출액에 0.3중량%의 니트로 셀루로오즈를 첨가하고, 5-30중량%의 경화 식물성유지크림에 0.2중량%의 프로필렌글리콜 알기네이트, 0.1중량%의 슈가에스테르, 0.3중량%의 자당을 첨가하며, 필요에 따라서 0.01중량%의 중합인산염, 0.3중량%의 과실주를 첨가한 후에 그 혼합물을 8℃이하의 온도로서 교반하고, 압력 5-10/㎠의 저온 균질화처리를 행하며, 10℃이하의 온도로서 에이징에 의하여 생성하는 것을 특징으로 하는 대두 가공식품의 제조방법.
- 대두 침출액에 니트로 셀루로오즈를 첨가하고, 정제 경화유지 크림에 알긴산 유도체, 슈가 에스테르 및 향료 혹은 과육을 첨가하며, 필요에 따라서 중합 인산염, 항산화제 및 과실주를 첨가한 후에 그 혼합물을 저온에서 교반하여 균질유화하고, 저온 에이징에 의해서 조리용 소오스를 생성하는 것을 특징으로 하는 대두 가공식품의 제조방법.
- 제 2 항에 있어서, 식물성음료는 배합예에 있어 3-4중량%의 이온계 성분을 첨가하고, 그 대신에 3-4중량%의 대두 침출액을 감소시키는 것을 특징으로 하는 대두 가공식품의 제조방법.
- 대두 침출액에 니트로 셀루로오즈를 첨가하고, 정제 경화유지 크림에 젤라틴, 슈가에스테르를 첨가하며, 필요에 따라서 중합인산염, 항산화제 및 과실주를 첨가한 후에 그 혼합물을 저온에서 교반하여 균질유화하고, 저온 에이징에 의해서 식물성 디저트를 생성하는 것을 특징으로 하는 대두 가공식품의 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
