Abstract
Description
ピコリン酸鉄は、米国特許第4315927号、実施例3の手順に従って調製した。硫酸鉄(Dr Paul Lohmann(商標))(サンプルA)又はピコリン酸鉄(サンプルB)を添加し、2.1%ストロベリーを含有する発酵乳飲料を鉄により栄養強化した。鉄塩の量は、発酵乳飲料100g当たり約2.1mgの鉄が提供されるように選択した。発酵乳飲料には各鉄塩を添加し、アルゴン下で20分間撹拌した。鉄により栄養強化しないサンプルも同じ方法で更に調製した。X−Rite ColorEye 7000A色差計を使用して、1×1cmのポリスチレンキュベット内で色測定を行った。色差計は、D65光源、10°の観察角で、かつ反射成分を含んで設定した。鉄塩非含有飲料と鉄強化飲料との色差を、鉄塩ごとに測定し、CIELABカラースケールを使用してΔEab*として表した。
Caco−2細胞を試験官内消化と組み合わせて使用して、異なる鉄含有化合物を有する、乳含有食品マトリックス(ヨーグルト)中の鉄のバイオアクセシビリティを測定した[R.P.Glahn et al.,Journal of Food Science,64(5),925〜928.(1999)]。ヨーグルト全量中の鉄の量は100μg/gであった。
Claims (15)
- 果物及び/又は野菜類と、ピコリン酸鉄と、フェノール性クロモフォア化合物とを含む、飲料。
- 前記フェノール性クロモフォア化合物が、クルクミン、カルミン酸、ベタニン、ポリフェノール、及びこれらの混合物からなる群から選択される、請求項1に記載の飲料。
- 前記果物が、イチゴ、ラズベリー、ブルーベリー、ブラックベリー、アンズ、西洋ナシ、バナナ、マルメロ、クコ、及びこれらの混合物からなる群から選択される、請求項1又は2に記載の飲料。
- 赤色である、請求項1〜3のいずれか一項に記載の飲料。
- 乳飲料である、請求項1〜4のいずれか一項に記載の飲料。
- 前記乳が牛乳又は豆乳である、請求項5に記載の飲料。
- 酸乳飲料である、請求項5又は6に記載の飲料。
- 飲料製造用粉末であって、ピコリン酸鉄及びフェノール性クロモフォア化合物を含む、粉末。
- 変色を生じさせずに飲料を栄養強化するためのピコリン酸鉄の使用。
- 前記飲料の貯蔵寿命にわたって前記変色が防止される、請求項9に記載のピコリン酸鉄の使用。
- 前記飲料が加熱処理されたものである、請求項9又は10に記載のピコリン酸鉄の使用。
- 前記飲料が果物及び/又は野菜類を含む、請求項9〜11のいずれか一項に記載のピコリン酸鉄の使用。
- 前記飲料が酸乳飲料である、請求項9〜12のいずれか一項に記載のピコリン酸鉄の使用。
- 鉄により飲料を栄養強化するための方法であって、
果物及び/又は野菜類を含有する飲料を調製するステップと、
ピコリン酸鉄を添加するステップとを含む、方法。 - 熱処理を更に含む、請求項14に記載の方法。
