Abstract
【解決手段】長手方向に貫通する孔2を有する押出し麺であって、当該孔2が、茹で上げあるいは湯戻しの際に閉塞又は縮小するものであり、麺線1の横断面における前記孔2の形状が、麺線1の横断面の中心から径外方向に延び、かつ、前記横断面の中心を基準として回転対称に形成された複数の溝部22を有するものである。

Claims (9)
- 長手方向に貫通する孔を有する押出し麺であって、
当該孔が、茹で上げあるいは湯戻しの際に閉塞又は縮小するものであり、
麺線の横断面における前記孔の形状が、麺線の横断面の中心から径外方向に延び、かつ、前記横断面の中心を基準として回転対称に形成された複数の溝部を有するものであることを特徴とする押出し麺。 - 前記孔が、孔を含めた麺線の断面積に対して2%〜15%の面積を占めるように形成されていることを特徴とする請求項1に記載の押出し麺。
- 前記複数の溝部の先端が、前記麺線の横断面の中心から麺線外周縁までの距離の30%〜70%の位置に達していることを特徴とする請求項1又は2に記載の押出し麺。
- 前記複数の溝部が、3回対称ないし8回対称のいずかの回転対称に形成されていることを特徴とする請求項1ないし3のいずれかに記載の押出し麺。
- 麺線の横断面における前記孔の形状が、前記複数の溝部のうち隣り合う関係にある溝部の先端同士の間で、前記麺線の横断面の中心に向かって入り込んだ陥入部分を有した形状であることを特徴とする請求項1ないし4のいずれかに記載の押出し麺。
- 前記複数の溝部の先端が、曲面を有することを特徴とする請求項1ないし5のいずれかに記載の押出し麺。
- 前記麺線の横断面形状の外形が円形であることを特徴とする請求項1ないし6のいずれかに記載の押出し麺。
- 前記請求項1ないし7のいずれかに記載の押出し麺をα化後、乾燥させることを特徴とする即席麺の製造方法。
- 前記請求項1ないし7のいずれかに記載の押出し麺をα化せずに乾燥させることを特徴とする乾麺の製造方法。
