1278303 Heating milk to reduce its xanthine oxidase content; ice-cream; cheese K A OSTER 28 July 1969 [26 March 1969] 37729/ 69 Headings A2B and A2E [Also in Division C5] Bovine milk (e.g. whole or skimmed milk in liquid or solid form) is heated to inactivate a substantial amount (e.g. 98-100%) of its xanthine oxidase content without changing its other natural constituents and without substantially impairing its flavour. The milk may be pasteurised or homogenised. The milk may be heated at 95‹C for 5 mins. or at 85‹C for 30 mins. The treated milk may be frozen. The treated milk may be used to prepare cream, ice-cream, butter or cheese. [GB1278303A]
