Abstract

1526862 Long-life milk products G C CHEESEMAN M ANDERSON and R WILES 6 Sept 1977 [9 June 1976] 23923/76 Heading A2B In order to reduce a tendancy to feather in coffee an ultra high temperature cream or other liquid milk product has an increased casein content so that its total protein content is at least 4.37% by weight on a fat free basis, and a calcium content of not more than 0.10% by weight on a fat free basis. The product may be made by deionising skim milk to remove substantially all the calcium ions, mixing the skim milk with a preselected amount of caseins and cream to give a product of the desired concentrations and subjecting to a U.H.T. sterilization process.
