Abstract

Mechanical, electrical and/or electro-optical measurements of a plurality of parameters are used in the determination of the commercial grade carcass halves. The electrical measurements are compared with reference values in a control and storage unit and applied by stamping by 28 a classification symbol etc. on the carcass half. The mechanical measurements by gauges 23, 24 are of ham contour, and thickness at right angles thereto, while the thickness of the layer of fat, and flesh to fat rates at the back are sensed by insertion probes 25, 32, operating by conductivity or lift absorption measurement, and the weight is measured by a balance. The carcass half may be scanned in a dark enclosure using a fine-resolution video color camera supplying a microprocessor system comparing with standard values, the measurement results being applied to the carcass by a laser beam. <IMAGE>
