Abstract
1368854 Removal of bitter taste from fruit juice SNAM PROGETTI SpA 17 Feb 1972 [17 Feb 1971] 7488/72 Heading C6E [Also in Division C3] Citrus fruit juices are treated with an enzyme to at least partially convert flavonone glucosides or limonoid compounds into non-bitter substances, the enzyme being present in a filament so that it is not released to the solution. The filament may be formed from a nitrated, esterified, or etherified cellulosci polymer, a polyolefine, a polymer or copolymer of acrylonitrile, an acrylate, methacrylate, vinyl ester, vinyl chloride, vinylidene chloride or styrene, a polyamide, or butyral polyvinyl. The enzyme may be naringase.
