Abstract

A baked fruit-filled dough product, which may be packaged in a moisture-proof package, comprises a continuous dough crust which is derived from a raw dough containing 8-25% fat, 1-10% humectant, 4-16% sucrose, 45-60% flour, 0.5-2.0% leavening, 0-7% non-fat milk solids, 0-4% active dry yeast, and 0-1.5% salt, the product having been baked preferably at 300-425 DEG F. for 20-6 minutes and dried such that the crust has a moisture content of 10-25% by weight of the crust, the filling has a moisture content of 10-25% by weight of the filling, the product having an average moisture content of 13-25%, and the filling comprising 0-8% humectant and 4-25% apple powder in addition to the fruit ingredients. Suitable humectants include glycerine, sorbitol, and corn syrup.
