Abstract

Brewery wort is cooked by withdrawing wort from bottom part of a cylindrical wort boiler in order to lead it to an external heat exchanger or calender, and withdrawing the wort at heat-exchanger outlet for returning it to wort boiler and set up a continuous closed cycle flow between wort boiler and heat exchanger. Treatment afflows N-contg. matl. pptn., diastase destruction, wort sterilisation and concn. Wort returns, from outlet of heat exchanger or calender to wort boiler, takes place in an approx. tangential direction to cylindrical side-wall of boiler, at a position which is appreciably lower than free wort surface in wort boiler. Process is used for prepn. of over- and under-fermented beer types. Spray-phenomena are prevented. Wort returned is directed downwards in a spiral motion.
