Abstract

Procedimiento para preparar un producto alimentario adecuado para el consumo, que comprende un emulsionante, comprendiendo el procedimiento las etapas siguientes: (i) proporcionar un material alimentario conteniendo un éster de ácido graso y un segundo constituyente; (ii) poner en contacto el material alimentario con una enzima de tal modo que se genere un emulsionante mediante la enzima a partir del éster de ácido graso y se genere un segundo ingrediente funcional a partir del segundo constituyente; (iii) inactivar o desnaturalizar la enzima para proporcionar el producto alimentario que comprende el emulsionante, el éster de ácido graso y la enzima en una forma inactiva o en una forma desnaturalizada.
