Abstract
Изобретение относится к винодельческой промышленности, в частности к производству игристых вин, произведённых из свежего виноградного сусла. Согласно предложенному способу предусматривается переработка винограда шампанских сортов в условиях, исключающих окисление сусла на этапах сбора и доставки винограда, отделения сусла от мезги, отстоя и осветления закладка бродильной смеси, открытое контролируемое брожение до достижения необходимых кондиций по содержанию сахара с учётом кондиций в готовом продукте, дображивание в изобарических условиях до кондиций по содержанию сахара в готовом продукте выдержка на дрожжах или её отсутствие охлаждение и выдержка до достижения розливостойкости грубая и тонкая фильтрация в изотермических и изобарических условиях изобаротермический розлив готового продукта. Результатом является возможность сохранения ораганолептических свойств свежего винограда и ПАВ (поверхностно-активных веществ), совокупных свойств пенообразования и игры (перляжа) высокого качества в готовом продукте, получения игристого вина без вторичного брожения.The invention relates to the wine industry, in particular the production of sparkling wines produced from fresh grape must.
