Jedes Brot, welches aufbewahrt wird, nimmt aus der Luft Organismen auf, hauptsächlich in Form von Pilzsporen, die je nach den Bedingungen, unter welchen dasselbe aufbewahrt wird, mehr oder weniger zur Entwicklung gelangen. Ein einzelnes Brot, an einem luftigen Ort aufbewahrt, hält sich bei günstiger Witterung oft monatelang gesund, ohne dafs die Pilzsporen wegen zu grofser Trockenheit der Brotrinde zur Entwicklung kommen. Das Brot trocknet aus, wird hart, schwer geniefsbar und dem Schiffszwieback ähnlich.
