Jedes Brot, welches aufbewahrt wird, nimmt aus der Luft Organismen auf, hauptsächlich in Form von Pilzsporen, die je nach den Bedingungen, unter welchen dasselbe aufbewahrt wird, mehr oder weniger zur Entwicklung gelangen. Ein einzelnes Brot, an einem luftigen Ort aufbewahrt, hält sich bei günstiger Witterung oft monatelang gesund, ohne dafs die Pilzsporen wegen zu grofser Trockenheit der Brotrinde zur Entwicklung kommen. Das Brot trocknet aus, wird hart, schwer geniefsbar und dem Schiffszwieback ähnlich. Lagern mehrere Brote unter den angeführten Verhältnissen zusammen, so findet an den Berührungspunkten, woselbst die Rinde der Brote weniger ausgetrocknet ist, Schimmelbildung statt, die oft die ganzen Brote bei äufserlich gesundem Ansehen vollständig durchsetzt.Every bread that is kept takes in organisms from the air, mainly in Form of fungal spores that, depending on the conditions under which it is kept, more or less develop.
