Auf die verschiedenste Weise ist versucht worden, zu einem miiglichst hochprozenti- gen Reinsaponin zu gelangen. Die vorgeschlagenen Wege führten al)er nur zli Teilerfolgen bzw. ztt technisch nicht verwertbaren Verfahren; insbeson- <lere gelang es nicht, die beiden Hauptverunreini- gungen, Zucker und Eiweiß, auf rationelle Weise zu entfernen. [)er Erfindung liegt null die Aufgabe zugrunde, daß iin Extraktionsverfahren gewonnene Rohsapo- nin insbesondere von dem Zucker zu befreien. Dies Nvird dadurch erreicht, daß die nach der Entgeistung anfallenden Miscellen mit ol)er- gärigen vergoren )i erden. Die verdiiiinteii Sirupe zeigen eine "e)\ isse An- fälligkeit für alkoholische und andere, insbesondere milchsaure Gärungen. Der Grad der Schaumkraft des Saponins ist nach bislierigen Beobachtungen abhängig von dem im Saponin nachweisbaren Restzucker (reduzierende Substanz) ; er kann in weiten Grenzen willkürlich variiert werden. Dies ist wichtig für die Herstellung von Trockensaponin für Zwecke z.
