Abstract
一种茵陈黄芪香酱油,它根据中医学“药食同源”的理论,将豆饼粉、麸皮、茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋组方,应用酶工程,细胞工程、发酵工程相配合的生产新工艺而制成的特殊营养调味品。该酱油维生物菌体蛋白、菌体脂多糖。维生素和矿物质含量较全面。加之含有茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋等中药特殊营养成分,正常食用有增强机体网状内皮系统的吞噬功能,激活细胞增殖分化,提高体液免疫力,帮助肝胆肠解毒、滋肾阴壮肾阳、促进白细胞诱生干扰素,清除体内自由基,防治感冒,抗疲劳抗衰老,提高工作效率的功能。

本发明属于调味品领域,具体涉及用茵陈黄芪等中药真菌物质和微生物细胞物质制作营养功能型茵陈黄芪香酱油的制作方法。
酱油作为调味品在我国有悠久的酿造历史,但是用中草药制作营养保健型酱油在国内外尚未见报道。
本发明的目的在于:设计一种以茵陈、黄芪等中草药发酵而成的茵陈黄芪香酱油及其制作方法。以克服现有酱油只能作为调味品不具有保健功能的缺陷。
本发明的技术方案是:用豆饼、麸皮和具有营养功能的中药茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋等原料配伍,粉碎后作为米曲霉、黑曲霉培养基,培育成高密度曲霉细胞体,然后水解成蛋白液,再以此液为培养基,培育成高密度细菌、酵母活性细胞菌体液,用高温灭菌溶体的方法制成茵陈黄芪香酱油。
本发明的制作技术:
1、将豆饼、麸皮、茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋等具有激活微生物繁殖力的食物中药配伍,作为米曲霉、黑曲霉培养基。
2、将固态曲霉细胞体再低盐固稀化,进行恒温水解10天后加温开水浸泡滤出蛋白液。
3、在蛋白液里补足碘盐,添加淀粉糖浆和细菌、酵母活性细胞纯菌液,采用32度恒温培育6天,提高温度促使微生物细胞代谢加速和自溶,然后再降至32度进行恒温培育8天。
4、将高密度的细菌酵母活性细胞菌体液进行高温灭菌溶体,兑入5’一鸟苷酸,5’一肌苷酸、谷氨酸和本钾酸钠,自然冷却澄清,即成为具有浓郁香气的酱油。
应用茵陈黄芪香酱油于饭菜中调味,不但能提高饭菜清香鲜美的口味,而且增加了饭菜中特殊的营养成份。经临床试验和科学鉴定,正常食用有增强机体网状内皮系统的吞噬功能,激活细胞增殖分化、提高体液免疫力,帮助肝胆胃肠解毒,滋肾阴壮肾阳,清除体内自由基,促进白细胞诱生干扰素,防治感冒、抗疲劳抗衰老,提高工作效率的功能。
下面介绍本发明的工艺流程
将豆饼、麸皮、茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋混合粉碎→润水蒸熟→冷却接入曲霉纯菌种→恒温固态培育高密度曲霉细胞体→恒温固稀低盐水解→浸泡滤出蛋白液→补碘盐接入细菌酵毒活性细胞纯菌液→恒温液态培育高密度微生物细胞菌体液→高温灭菌溶体→自然冷却→澄清→成品。
下面介绍本发明的实施方法:
将豆饼350公斤、麸皮150公斤、茵陈5公斤、黄芪5公斤、菟丝子5公斤、金针菇5公斤、党参4公斤、五味子2公斤、马齿苋2公斤配伍,粉碎润水蒸熟,冷却后接入米曲霉纯菌种5公斤,黑曲霉2公斤、进行恒温固态培育高密度曲霉细胞体,再将其低盐固稀化进行52度恒温水解成原料1∶2的蛋白液,在此液里补碘盐100公斤,32度淀粉糖100公斤,添加鲁氏酵母活性纯菌液100公斤、乳酸菌活性细胞纯菌液50公斤进行32度恒温培育成高密度活性细胞菌体液,经高温灭菌溶体后,兑入5’一鸟苷酸1公斤,5’一肌苷酸1公斤、谷氨酸10公斤和本钾酸钠1公斤,自然冷却澄清。
经检验每100毫升产品中,所含营养成分为:蛋白质11毫克、脂肪0.03毫克、碳水化合物10毫克、微生素A100国际单位、D300国际单位、B10.02毫克、B21.2毫克、VE3.9毫克。矿物质:钙36毫克、磷80毫克、铁0.5毫克、锌0.3毫克、碘0.02毫克、硒0.3毫克。
Claims (3)
1、一种茵陈黄芪香酱油及其制作方法,其特征是:用豆饼、麸皮和中药茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋等原料配伍,粉碎后作为米曲霉、黑曲霉培养基,培育成高密度曲霉细胞体,然后水解成蛋白液,再以此液为培养基,培育成高密度细菌、酵母活性细胞菌体液,用高温灭菌溶体的方法制成茵陈黄芪香酱油。
2、根据权利要求1所述的一种茵陈黄芪香酱油及其制作方法,其特征在于:所述中草的组份为:豆饼350公斤、麸皮150公斤、茵陈5公斤、黄芪5公斤、菟丝子25公斤、金针菇5公斤、党参4公斤、五味子22公斤、马齿苋2公斤配伍粉碎润水蒸熟作为养基。
3、根据权利要求1所述的一种茵陈黄芪香酱油及其制作方法,其特征是:制作方法为:
(1)将豆饼、麸皮、茵陈、黄芪、菟丝子、金针菇、党参、五味子、马齿苋等中药配伍,作为米曲霉、黑曲霉培养基。
(2)将固态曲霉细胞体再低盐固稀化,进行恒温水解10天后加温开水浸泡滤出蛋白液。
(3)在蛋白液里补足碘盐,添加淀粉糖浆和细菌、酵母活性细胞纯菌液,采用32度恒温培育6天,提高温度促使微生物细胞代谢加速和自溶,然后再降至32度进行恒温培育8天。
(4)将高密度的细菌酵母活性细胞菌体液进行高温灭菌溶体,兑入5’一鸟苷酸,5’一肌苷酸、谷氨酸和本钾酸钠,自然冷却澄清。
